Onions and garlic belong to the Allium genus. Allium, in fact, is derived from the Greek word for garlic. Shallots, leeks, and chives are also members of the allium family. Fresh, also called “sweet”, onions have a milder taste.

Leeks are a member of the onion family. The edible part of the leek plant is a long cylinder of bundled leaf sheaths which is sometimes called a stem or stalk. As the leek grows in height, soil is pulled around the base of the plant, blanching the stem- making it white and tender.
“Chives are a completely different species, Allium schoenoprasum,” McNeal says. The Latin name for the leek is Allium ampeloprasum var. porrum. Leeks are firmer and denser than scallions, with a milder flavor.
