What is a 30 minute fire rated wall?

A fire rated wall is an assembly of parts. That might include 5/8" type X drywall but the drywall alone is not a fire rated assy. See ASTM E-119. BTW, you get 30 minutes out of the one sheet of 5/8ths pm one side of a typical insulated stud wall. One sheet on each side gives you a 2 hr wall assy.

Is there fireproof sheetrock?

Drywall is relatively fireproof, but manufacturing processes such as adding glass fibers can increase the resistance. Drywall is relatively fire resistant. It's composed of gypsum pressed between two sheets of thick paper. Gypsum is a soft mineral that by itself is not flammable.
